Vegan Chocolate Peanut Butter No Bake Oatmeal Cookies



Now it has been brought to my attention that some people in this country don't know what a no bake cookie is. Well let just say how horrible I feel for those folks and I hope to rectify that right now.

These are a very easy cookie that requires no baking hense the word no bake. You are required to melt sugar and that does need all you attention cause it can burn quickly and have a bitter taste. 

Now I got this recipe from the Food Network here. I only changed the ingredients to vegan and the taste is awesome, and no animals were abused to make them.  

No-Bake Cookies

2 cups organic sugar

4 tbsp cacao powder

1 stick Earth Balance Vegan Butter or 8 tbsp if you don't have the sticks 

1/2 cup vegan milk 

1 cup Earth Balance Peanut Butter

1 tbsp vanilla extract

3 cups oatmeal 

2 cookie sheets lined with wax paper

Place the sugar, cacao, butter, and the milk in a pan and bring to a boil. Stir constantly until it boils as soon as it boils get it off the stove, and add the vanilla (careful it's gonna bubble up) and the peanut butter stir till melted. Lastly add the oats stir in till well combined then drop a  teaspoon size pile on the wax paper repeat till all gone. Makes about 4 dozen cookies place in fridge and let cool and enjoy.
