Vegan Snickerdoodles





If you have not figured it out yet, I am a sucker for pretty much any form of junk food especially cookies. These cookies are so full of flavor and bring so many memory's of my grand-ma making these for the holidays. I could go on on about the recipes that where in my childhood but I don't want anyone to fall asleep on the keyboard. 
We found this recipe at Vegan Yum Yum and only a couple minor add ins to recipe to make it perfect. Just remember to line up your ingredients and put them away when done so no doubling up on anything. 


Vegan Snickerdoodles

1 cup sugar
1/2 cup Earth Balance Butter
1 tsp vanilla extract 
1 egg replacer ( I use Bob's Red Mill)
1 1/2 cups flour
1/4 tsp cream of tarter
1/4 tsp baking soda 
1/4 tsp baking powder
1/4 tsp sea salt 

1 batch of cinnamon-sugar ( 2 tbsp cinnamon + 2 tbsp sugar)

Using your stand or hand mixer start with the sugar, butter, egg re-placer, and vanilla  and mix together till well combined. 
In another bowl whisk all the dry ingredients together minus the cinnamon-sugar mixture then pour into the creamy mix mixing on a low speed till combined don't over mix. Place in the fridge for 1 hour ( do your dishes while you wait). 
Pre-heat oven to 375 degrees. 
Line a cookie sheet with parchment paper and pull the chilled dough out of the fridge. Now take 2 tbsp of the dough and roll into a perfect ball and place into the cinnamon-sugar mixture. Roll the balls around until well coated then place on the tray. 
Using a fork or whatever you got smash down the dough till they look cookies. Bake for 10-12 min, 10 min for chewy soft style or 12 min for a crunchyer style.
