Raw Curry and Veggies over Pasta Noodles

Looking to expand my flavors a bit, I have always wanted to learn how to make a curry. After watching a couple of videos on the YouTube and reading about a dozen different recipes this what I came up with. Whether I am right or wrong I don't know but it taste great.

Curry Sauce

1 cup raw cashews

2 cups non dairy milk (Amber makes her own almond milk)

1/2 an onion

1 tbsp minced ginger

2 cloves minced garlic

1.5 tbsp curry powder

1 tbsp black pepper

1 tsp sea salt

Toss all ingredients in the blender and blend on low till its mix well.

Use which ever veggies you want I used

1/2 egg plant sliced

1/2 green pepper sliced

1 stalk of celery sliced

1/2 a zucchini sliced

1 carrot sliced

Put your veggies in large bowl and pour the curry over the veggies and let rest in the fridge for at least an hour the longer it still the better it will get. Now you pair this up with whatever you want I decided on some rigatoni noodles, I cooked them and let them cool since everything else was raw I wanted them to be cold also.

Wash and cut all veggies.

Thats the ginger in the silver bowl.

Mix till combined

Place in a bowl

Pour curry over top.

mix well

make sure its on all the veggies.
Mine sat for 4 hours.

Cold pasta rocks.

Pasta goes first.

Then the curry and veggies.
Have fun and Enjoy.

The ChocolaTree Sedona Az.- Reveiw

What to say about this place the food is very good and unique. There is a very large hippie vibe (nothing against hippies) thing going here that you need to deal with but other than that the food is really good and good for you. A lot of raw options which I am liking more and more. The more raw that I eat I really see the difference in the foods I still love the cooked foods and always will. Like most places I have so far on this trip you order at the counter and they bring it out to your table, this is different to me I am not used to the ways of the world yet.  We decided to eat here twice since the vegan options are very limited in Sedona Az. The desserts were out of the world I love when the desserts are raw cause the taste is so pure.

Viva Burrito: tomato, red bell pepper, red onion, shredded cabbage, creamy vegan cheddar, pico d gello, guacamole, tomato wrap   $11

Avocado Herb Sandwich: creamy herb pate, tomato, avocado, red onion, clover sprouts, seasonal greens on onion flat bread  $10

Coconut Cream Pie: stone ground coconut creme, agave nectar, macadamia nuts, vanilla, pecans   $6.50

Double Chocolate Ganache: pecans, black raisins, cacao, dates, coconut, vanilla    $7.50

Veggie Burger: sunflower seed and veggie patty, ketchup, honey mustard, sauteed onion, tomato, lettuce, ancient grain bread   $11

Papa's Potato Soup: yukon gold potatoes, carrots, celery, onions, garlic, black pepper Cup $6 bowl $8

Grilled Cheese: Grandma's ancient grain bread, creamy vegan cheese, fresh tomato   $9

As you can see the prices are a little steep but you definitely don't leave here hungry.

When it's all said and done I would most definitely recommend anyone even close to Sedona Az. to come and enjoy this crazy version of dining.

Raw Creamy Mushroom Alfredo over Zucchini Pasta

Well trying to eat lighter after my week and half long pig out fest I decided on some creamy alfredo. It sounds like a heavy meal but since it's all is raw it's very light and fulfilling. You can find my recipe here, but since we are going raw on this one use 1/2 cup less water. I didn't want any vegan meat in this but I wanted some body to the sauce so that's why I went with the mushrooms.

So you will need

1 batch of my raw alfredo sauce

2 cups washed and chopped mushrooms

1 zucchini washed and cut into pasta noodles

After you blend the sauce together mix in the mushrooms and let it chill in the fridge for 30 min to thicken up (if it gets too thick then gently whisk in some water a tbsp at a time till it is where you want it to be). While that's chillin go ahead and cut your zucchini up into noodle shapes. Now some people say to soak the cut zucchini in some lemon water before you use it but I don't its all in what you like. Now all you gotta do is plate it up and eat this simple good raw meal.

Pomegranate Cafe Phoenix Arizona - Review

As soon as we got our rental car the first thing we had to get something to eat we were still on Pa time. This was our first taste of vacation and let me tell something this place needs to be on your bucket list. As soon as you walk in the atmosphere of the place is so laid back and so colorful, we never see places like this back home anywhere not even in the big cities close to us. You order at the counter and the bring it too your table it was only a couple of mins from the time we ordered to when our smoothies came out and the food came not long after. It was sooooo good I will definitely be going back to this place.

Real easy to find.

So colorful.

When ordering tell them you want it all to be vegan and the make all the changes.

Bright Bunny(left) it has OJ,  Carrot, Coconut water, Pineapple, Mango. On the right is a Chocolate Cherry Bomb it has Cherries, Banana, Chocolate Sunwarrior Protein Powder, Almond Milk, and Raw Cacao.

The Lumberjack it has Ancient Grain bread sandwich with tofu, temeph bacun, tomato, chipotle aioli, avocado

Ranchero Skillet it had Tofu, soy chorizo, avocado, cheese, spinach tortilla, salsa, tepary beans

The desserts were beyond great there is not even a word to describe them.
We decided to take our desserts to go, we had a raw snickers, raw lemon bar, and a raw brazilian brownie. I have learned that the raw desserts taste so much better to me.
