Raw Tacos made with Almond Pulp Taco Meat



After check out the This Rawsome Vegan Life blog for some great ideas I saw some  raw burritos and it got me thinking. Now that Amber is making her almond milk we have almond pulp to use so this is what I came up with for a nice raw supper. You will see on the recipe that I use a package of taco seasoning from Trader Joe's, be-careful because a lot of taco seasoning  packets are not vegan so double check your ingredients.

Here is what I used

Raw Tacos

1.5 cups almond pulp

1 tomato chopped

1 onion chopped

1 green pepper chopped

1 clove of garlic chopped

1 lime zested and juiced 

3 tbsp of Trader Joes taco seasoning  

1 head of leafy romaine lettuce washed/dried

Combined the first 7 ingredients till well combined. Taste and adjust to taste ( I thinks perfect like that). Wash your lettuce leaves very well and then dry between 2 paper towels. While drying using the heel of you palm press down on the spine of the leaf this will help with the rolling process. Roll the tightly tucking in the edges the best you can cut in half and you have yourself a great meal.
