The wife put these into my head a while ago and have not been able to make them till now. A lot of the best things I have been eating lately are raw and the are out of this world. This recipe comes from here and I made no changes to it, they were right on the money when they came up with this one. This will make 10 cups and they go together real easy
Here we go
The Raw Cookie
2/3 cup organic coconut oil (melted)
3 tbsp agave nectar
1/2 cacao powder
2 1/2 cups almond meal
Mix all together set aside.
The Peanut Butter Filling
2 tbsp organic coconut oil (melted)
2 tbsp agave nectar
3/4 cups earth balance peanut butter
The Chocolate Topping
1/2 cup organic coconut oil (melted)
4 tbsp agave nectar
1/2 cup cacao powder
Mix together and set aside.
This is real simple to assemble set out 10 cupcake cups into a cupcake pan
First put 1 tbsp raw cookie mix into the bottom of each of the cups and press gently, place in the freezer for 15 min.
Second pull them out of the freezer scoop 1 tbsp peanut butter filling per cup on top and smooth out, place back into freezer for 15 min.
Third pull them out of the freezer put 1 more tbsp raw cookie mix on top and press down gently. Guess what...... We put them back in the freezer for 15 min
Fourth step is to remove from the wrapper and coat with the chocolate topping and then finally you can.......put BACK in the freezer for 15 MORE min. Keep them frozen till your gonna eat them. Let sit at room temp For 5 min before you eat them FINALLY. I hope you enjoy these as much as I do.
