Vegan Buffalo Chicken Spring Roll with Pineapple Fried Rice




The best thing about my job is when I want to unplug from the world I can just shut the cb radio off ignore the iphone and think about whats gonna be on the menu for supper. Last night for some reason spring rolls popped into my little brain so I wanted to spice it up a little, why not buffalo style that sucker up. I had to call the wife at 4 am to tell her my idea (don't worry she is used to me calling at all hours of the night for stupid reasons).
To start we need to make a batch of my buffalo wing sauce which is found here, after we get that going we need to make the ranch for dipping it can also found here. Now that the sauces are made add some chicken into the picture today we are using 2 patties from Delight Soy these patties are out of the world, let them marinate for 2-4 hours in the buffalo sauce. Bring a small pot of water to a boil add 1/3 of the package of the rice sticks and remove from heat let sit for 10 min, mix with 2-4 tbs of the buffalo sauce makes about 2 cups.


















Buffalo Chicken Spring Rolls

1-2 carrots sliced very thin

1-2 stalks of celery sliced very thin

2 marinated Delight Soy chicken patties sliced very thin

1 package alfalfa sprouts

2 cups prepared rice sticks

1 package spring roll wrappers (you will not use them all)

1 pan of room temp water (make sure the whole dry wrapper fit in it)

Once you have this all collected up have yourself a nice big staging area, start by dipping the wrapper into the water let soak for 30 to 45 seconds if you go to long it gets hard to work with. lay the soaked wrapper out and start with alfalfa sprouts, then 2-3 slices carrots and celery, then 2-3 slices of the chicken top it off with the rice sticks.













Now the rolling part its as easy as 1-2-3-4-5

step 1 fold the top down

step 2 fold the right side

step 3 fold the left side

step 4 roll tightly towards you

step 5 repeat till all ingredients are gone

The pineapple fried rice is just like my rice found here with addition of dice pineapple so very easy. Now plate it up and enjoy.
