Vegan Steak Sandwich with Cabbage and Noodles


Well like a typical Friday they worked me  14 hours so when I get up I want dinner in a hurry and this comes together in a snap. Here is what we need

Steak Sandwich 

1 tbsp canola oil

1 onion sliced 

1 green pepper sliced

2 cloves minced garlic

5-6 button mushrooms sliced

1/2 a pound vegan meat substitute ( I only use Delight Soy)

Salt and pepper to taste

Daiya Cheese- Your choice of sliced or shredded, I used Swiss in this recipe

2 hoagie buns (your choice just make sure they are vegan)

Start by heating your oil up on a med to high heat toss in the peppers, onions, and garlic cook till your onions start to caramelize. Then add the mushrooms and as soon a they start to soften the turn down the heat and add the beef and some s/p cover and let cook on low heat for 15 min.










 Now the cabbage and noodles are just as easy. You need 

Cabbage and Noodles

1/2 a head purple cabbage thinly sliced

1/2 a head green cabbage thinly sliced

1 bag of vegan noodles ( double check to make sure they are vegan)

1 clove minced garlic 

2-3 tbsp earth balance butter

Salt and pepper to taste

Start  by boiling some water for the noodles boil as directed. Slice down your cabbages very thinly, drain the noodles then over high heat melt butter and add the garlic and cabbage and turn to med heat cook for about 5 min till the cabbage softens then add the noodles stir and serve it up.
