Vegan Chicken Salad Sandwich with a Twist of Chipotle

This might be one of the most simple, flavor-able salads to make. The kicker to any good sandwich is the bread that's why I opted to go with some Italian bread form The Bread Chef in Boardman OH. this place has a lot of vegan options when it comes to their breads.

Chipotle Chicken Salad

1 package chicken seitan chopped or about 2 cup of your favorite chicken substitute chopped

1/2 green pepper chopped

3 green onions chopped 

3 stalks of celery chopped

1/2 vegan mayo your choice 

1 clove minced garlic

1 tsp chipotle powder

1 tsp dill

1/2 tsp french thyme

 a pinch of turmeric 

Salt and pepper to taste

Combine the first 5 ingredients in one bowl in separate bowl combine everything else expect the salt and pepper keep that till the end, this way all the spices combine really good into the mayo then combine the two then let chill about 15 min in the fridge to let marry up the flavors  will come together the longer it sits the better it gets. Side it up with your favorite side here I paired it with some vegan cabbage and noodles  ( recipe to come).
