Vegan Stuffed Manicotti with a Homemade Ricotta and Upton's Italian Seitan



Stuffed manicottis are not hard to make just time consuming but it is well worth at supper time. First off we need to start with the tofu ricotta this is very simple but you have to let it rest at least 4 hours I let mine go over night.

Tofu Ricotta

1 package of firm tofu

2 tbsp lemon juice 

2 tbsp canola oil

2 cloves minced garlic 

1/4 cup nutritional yeast

2 tbsp Italian seasoning

1/2 tsp sea salt

1 tsp black pepper

Mix all the ingredients together and chill for at least 4 hrs or overnight. 












Now the garlic butter for the garlic bread now I make a big batch of cause it gets better the longer it's in the fridge and goes great on a lot of different things. Earth balance is the only vegan butter  I will use, its perfect  in baking and any other use you can think of. All of their products are awesome.

Garlic Butter

1 stick earth balance butter 

1 clove minced garlic

1 tbsp parsley ( optional)

Melt the butter 30 seconds in the nuker just enough to start melting it add the garlic and parsley stir it up and let it cool in the fridge.





Now the manicotti is very simple just boil till al-dente then get into cold water to stop the cooking,be very gentle cause they will split real easy. While they are cooling down grab some Upton's Naturals Italian Seitan and all you do is open it up and mix with the tofu ricotta. Pre heat your oven to 350. Now the stuffing part all I can say is take your time and and be careful not to blow out your noodles and once they start to tear than that one is out of the game grab the next one and continue . In a baking pan put a thin layer of sauce and place the stuffed manicotti in the pan and light cover with some sauce and cover the pan with foil and bake for 30 min heating some of that sauce on the stove top to pour over top.

















Toss under broiler for 1 min to crisp u






  At the 25 min mark you will want to spread some of that garlic butter we made on some Italian bread and toss it in the oven also. Then plate your manicotti up and enjoy.
